Mediterranean Sandwiches

This is a tasty twist on the “usual” chicken salad sandwich.

Makes 6 servings

4 boneless, skinless chicken breasts

1 t. dried basil

1⁄4 t. salt

1⁄4 t. pepper

1 c. cucumber, chopped

1⁄2 c. mayonnaise

1⁄4 c. roasted red pepper, chopped

1⁄4 c. sliced black olives

1⁄4 c. plain yogurt

1⁄4 t. garlic powder

6 kaiser rolls, split

Garnish: mayonnaise, lettuce leaves

Combine chicken, basil, salt and pepper in a stockpot. Cover with water and bring to a boil. Reduce heat and simmer, covered, 10 to 12 minutes until chicken is no longer pink in center. Remove chicken from pan; set aside to cool. Cube chicken and combine with remaining ingredients except rolls and garnish. Toss well to coat. Spread rolls with additional mayonnaise; top with lettuce and chicken salad mixture.

Nutrition Per Serving: 172 calories, 5g fat, 1g sat fat, 34mg cholesterol, 267mg sodium, 17g carbohydrate, 1g fiber, 1g sugars, 15g protein.
